Malva Pudding is a South Africa staple dessert, usually served with custard or vanilla ice cream. Seeing that we were far away from home, I decided to bring a little taste of South Africa to the US with this malva pudding recipe. Hope you enjoy it!
Ingredients
- 1 cup flour
- ½ cup sugar
- 1 tsp baking soda
- Pinch salt
- 2 eggs
- 1 tbsp butter
- ⅓ cup milk
- 1 tsp vinegar
- 1 tbsp apricot preserve / jam
Sauce Ingredients
- ½ cup sugar
- 7 tbsp butter
- ⅓ cup boiling water
- ¾ cup fresh cream
- 2 tsp vanilla extract
Method
Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius, then grease an oven proof dish square or round.
Mix sugar and eggs together until light and creamy then add the apricot preserve / jam.
Melt butter and add vinegar to it. Combine to sugar and egg mixture.
Sieve flour, baking soda and salt.
Combine dry ingredients to the wet ingredients with the milk. Mix well.
Pour this mixture into the grease oven proof dish and bake for 25 – 30 minutes.
Sauce Method
Place all the ingredients for the sauce in a sauce pot and simmer until well combined.
Pour the sauce over the pudding immediately after taking it out of the oven and leave for 20 minutes before serving.
Tip
Every oven is different therefore temperatures might vary. Check if it is ready by inserting a toothpick in the middle of the pudding. If it comes out clear then it is ready.
