I’ve really been enjoying the fall / winter season this year. Not only is it the coziest time of the year but because I’ve been baking more and using so many different spices and fruit like apples. From pumpkin spice to cinnamon. So I wanted to share this apple cinnamon crumble muffin recipe. It is super easy to make and it’s become one my family’s favorite.
What Kind Of Apples To Use
You can use any kind of apples that you have on hand. However, I do find that some apples work better than some. Granny smith apples are generally used for baking because of their tartness which brings forth sweetness in baked goods. Pomme, pink lady, fuji or honey-crisp apples will work great for these apple cinnamon crumble muffins.
How To Make Apple Cinnamon Nut Crumble Muffins
Firstly preheat the oven to 350 degrees fahrenheit. Then start making the crumble first. That way it is ready to be sprinkled on top of muffin batter. If you find that the crumble is too dry, add more butter. Grate apples or you can cut it in cubes. If you decide to cut the apples, make sure the pieces are cut small and evenly so that the apples cook all the way through. Beat the eggs then add yoghurt, sugar and oil together. Fold in the grated or cut up apples into the wet ingredients. Sift the dry ingredients together into a separate bowl. Then fold the wet ingredients into the dry ingredients. The batter will be on the thick side but that’s okay. It should be like that. Divide the mixture into the muffin moulds of the pan. Sprinkle the nut crumble over the top the muffins. Bake for 20-25 minutes. Allow muffins to cool

Apple Cinnamon and Nut Crumble
Ingredients
- 2 large eggs
- 1/2 cup plain yoghurt
- 1/3 cup olive oil canola or sunflower oil can be used.
- 150 g granulated sugar
- 1/2 tsp salt
- 1 tbsp cinnamon
- 1 1/2 cup all purpose flour
- 3 apples grated (preferably pomme / pink lady)
- 1 tsp baking soda
Nut Crumble
- 2 tbsp brown sugar
- 50 g almonds shredded
- 50 g walnuts
- 1 tsp cinnamon
- 2 tbsp butter melted
Instructions
- Preheat the oven to 350 degrees.
- Grease and line muffin pan.
- Beat the eggs then add yoghurt, sugar and oils together.
- Fold in the grated apples into the wet ingredients.
- Sift the dry ingredients together into a separate bowl. Then fold the wet ingredients into the dry ingredients.
- Divide the mixture into the muffin moulds of the pan.
- Sprinkle the nut crumble over the top the muffins.
- Bake for 20-25 minutes.
- allow muffins to cool then drizzle with maple syrup.
