Special occasions are just not complete without a delicious orange cake. Here is one of my favorites, hope you enjoy!
Ingredients
- 2 cups flour
- 1 cup sugar
- 2tsp baking powder
- Pinch salt
- 3 eggs room temperature (separated )
- 1 cup freshly squeezed orange juice
- 3 quarter cup oil
- Orange rind of an orange
Method
Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius, then grease a 10.2 x 10.2 x 3.8 inch bundt cake pan or a 9.6 x 1.9 x 9.6 inch round cake tin.
Separate the egg yolks from the whites. Then in another bowl combine flour, sugar, baking powder and salt. To the yolks add oil, orange juice and the orange rind. Add the wet ingredients to the dry ingredients and gently mix until you have a smooth batter. Set aside and mix the egg whites with an electric mixer or whisk until you see stiff peaks. Gently fold in the egg whites to the batter. Pour the mixture into a greased cake tin and place into the oven for 25 minutes. After the cake has baked brush with apricot jam / preserve and dust with powdered sugar.
Tips
When measuring the flour, do not pack the cup completely with flour. The flour should be measured loosely. Packing the flour tightly into the cup will resort in more flour being …..
Too much flour in the mixture will result in the cake being dry and dense instead of light and fluffy.
Brushing apricot jam/ preserve will allow the cake to maintain its moisture.
